Cucumber Walnut Bread





We've been blessed with an abundance of cucumbers this summer so  I've been fixing them differently;  cucumber and onions, cucumbers salsa, cucumber sandwiches, sweet pickled cucumbers and this week I made my Cucumber Walnut cake.


Cucumber Walnut 



1 cup granulated sugar


1/2  stick salted butter


1 ½ cups whole, shredded Cucumber


2 large eggs


2 cups all-purpose flour


1 teaspoon baking powder


1 teaspoon baking soda


1 teaspoon Simply Organic Pure Vanilla extract

3 oz walnut pieces










Directions


Preheat oven to 350 degrees.


Mix butter and sugar until creamy.


Add eggs and beat another minute


Add vanilla to the mix.


Add shredded cucumbers to the mix. 



Mix together the dry ingredients and Walnuts and add to the creamed mixture.


When combined, pour into greased loaf or cake pan.



Bake  45 minutes or till it passes the toothpick test.



Makes 1 Pan.



Dust with powdered sugar.



Around here we forage at Mom's for Walnuts as she had trees that drop them. 
Black Walnuts have a green outer husk with a discernable scent. Remove the husk and clean the nut. Set the nuts out to dry (being as the scent is so strong- we lay them out on paper sacks.) When they are dry we crack them open they can be frozen. Their flavor is much stronger than the typical store-bought walnut so you may need to adjust the recipe measurement based on your taste.
