Buckeye Recipe




I heard someone once say if you live in Ohio you have to have Buckeye's at Christmas time.



Ingredients:


12 oz  natural peanut butter

3/4 stick salted butter, at room temperature

Drop of pure vanilla extract


1  3/4 cups powdered sugar

8 oz semisweet chocolate chips

Paraffin wax shavings



Directions:

Line cookie sheet with parchment paper.

In a mixing  bowl, stir together the peanut butter, butter and  vanilla and add the powdered sugar a little bit at a time.

 Roll the peanut butter mixture into balls. Place them on the cookie sheet. Place  in the refrigerator for a few hours.

In a microwave proof cup, combine the chocolate chips and wax shavings, watching closely.

Using the toothpick, dip the peanut butter balls into the chocolate to desired height.
(Typically buckeyes have a small tan patch but not this batch.)

Place the buckeyes back on the cookie sheet and refrigerate.
