Garden Harvest 2020
It's been a busy, hot, and dry summer here. The zucchini and cucumbers did not do as well this year but the butternut squash has been abundant.

We had a good crop of beans, cabbage, and tomatoes so have been able to do some canning, freezing, and made some sauces and pickled items for the refrigerator.
Before we froze our vegetables, we blanched or cooked them. Blanching is the process of scalding vegetables in boiling water before putting them in a cold water bath and then freezing them.
Blanching stops the enzymes from changing the color and/or taste and it removes any dirt or organisms from the vegetables which help stop the loss of nutrients.
We have tomatoes ripening on the windowsill. These will be used for more homemade salsa.
We will be picking to just prior to the first frost which is still about a month away.
