Summer Gardening
We left a small path in the garden this year to get back to the raised beds which hold our lettuces, radishes, cabbage, and kale.
While we didn't see as many zucchinis and cucumbers this year, the butternut squash has really put on a show.
We only got a few squash plants which we placed on flat ground. By mid-summer, the path became covered in butternut squash that was trying to find room for itself.
I like to roast squash and occasionally puree it for soups. We plan to cook some of our squash in butter and some we'll freeze to use for roasting or for pies. Butternut squash can be mashed for breads, muffins, and pies with the spices I use mine tastes similar to a pumpkin pie.
